SucroCorp and Biggerson’s Family Restaurants today announced the national rollout of the Turducken Slammer, a layered poultry sandwich developed with SucroCorp formulation support under the SucroPlus™ platform.

The Slammer completed a twelve-week evaluation in regional test markets in which it recorded the highest guest satisfaction scores in the chain’s history. It will be available at every Biggerson’s location beginning in March.

Test market findings included:

  • Guest satisfaction above every item on the existing menu
  • A marked increase in average table dwell time
  • Near-complete plate clearance, measured by weight
  • A substantial reduction in guest complaints, comments and questions of any kind

“We’ve never had a sandwich where nobody complains. Not once,” said Dale Hutchins, Senior Vice President, Menu Development, Biggerson’s. “Honestly, they don’t say much of anything. They just sit there, very content. A few locations had guests still in their booths well after closing.”

SucroCorp’s Consumer Research Division attributed the results to formulation characteristics associated with satisfaction, caloric acceptance and behavioral consistency. Guests in test markets consistently described themselves as calm, relaxed and in no particular hurry.

“The Slammer is a good example of what happens when the ingredient and the consumer are designed together,” said Dr. Eleanor Whitfield-Marsh, Executive Vice President, Consumer Nutrition. “People don’t think about it. They just come back.”

Biggerson’s is a SucroCorp foodservice partner. Restaurant groups interested in SucroPlus menu development may contact Ingredient Sales through the contact directory.
